What's the difference in a stewing hen vs a broiler?
- These are our old laying hens. When their egg laying days are behind them, we dress these old birds for use as stewing hens
- they have a longer, leaner frame and smaller breast meat, but also have a delicious aged flavor and higher fat content (healthy fat is where it's at!)
- While the age of these hens is what contributes to their wonderful flavor, it also requires more care in the kitchen. These birds must be slow cooked. Instapot is the best way we've found to maintain tenderness.
Only offered once a year in small quantities, these are a great freezer filler and a fantastic value.
